Ingredients
- 1 lb steak, cut into bite-sized pieces
- 2 cup long grain rice
- 2 cup vegetable broth
- 2 cup baby spinach
- 1/2 sweet onion, diced
- 1 tbsp minced garlic
- 1 1/2 sticks butter, divided
- 2 tbsp all-purpose seasoning
- 1 tbsp black pepper
- 1/2 tbsp salt
Instructions
- Melt 1/2 stick of butter in a large skillet over medium heat and sauté the diced onion for 3 minutes until translucent.
- Stir in the baby spinach, all-purpose seasoning, pepper, and salt, then cover and cook for 2 minutes until the spinach is wilted.
- Add the rice to the skillet, stir to combine, pour in the vegetable broth, cover, and simmer for 15–20 minutes until the liquid is absorbed and rice is tender.
- While the rice cooks, melt the remaining 1 stick of butter in a separate pan over medium-high heat and sauté the minced garlic for 1 minute until fragrant.
- Add the steak bites to the garlic butter and cook, stirring occasionally, for 5–7 minutes until browned and cooked through.
- Pour the steak and garlic butter mixture into the rice skillet and mix everything together gently before serving.
