Ingredients

  • 1 lb steak, cut into bite-sized pieces
  • 2 cup long grain rice
  • 2 cup vegetable broth
  • 2 cup baby spinach
  • 1/2 sweet onion, diced
  • 1 tbsp minced garlic
  • 1 1/2 sticks butter, divided
  • 2 tbsp all-purpose seasoning
  • 1 tbsp black pepper
  • 1/2 tbsp salt

Instructions

  1. Melt 1/2 stick of butter in a large skillet over medium heat and sauté the diced onion for 3 minutes until translucent.
  2. Stir in the baby spinach, all-purpose seasoning, pepper, and salt, then cover and cook for 2 minutes until the spinach is wilted.
  3. Add the rice to the skillet, stir to combine, pour in the vegetable broth, cover, and simmer for 15–20 minutes until the liquid is absorbed and rice is tender.
  4. While the rice cooks, melt the remaining 1 stick of butter in a separate pan over medium-high heat and sauté the minced garlic for 1 minute until fragrant.
  5. Add the steak bites to the garlic butter and cook, stirring occasionally, for 5–7 minutes until browned and cooked through.
  6. Pour the steak and garlic butter mixture into the rice skillet and mix everything together gently before serving.
