Cajun Egg Boil by Cowboychrisdorrah
Hard-boiled eggs simmered in a bold, spicy Cajun-spiced herb butter and vegetable broth sauce.

Ingredients
- 8 large eggs
- 113g (1 stick) herb butter
- 2 tbsp minced garlic
- 1 1/2 medium sweet onions, diced
- 475ml (2 cup) vegetable broth
- 2 tbsp chili powder
- 2 tbsp smoked paprika
- 2 tbsp onion powder
- 2 tbsp lemon pepper seasoning
- 2 tbsp garlic powder
- 2 tbsp old bay seasoning
- 2 tbsp cajun seasoning
Instructions
- Bring a large pot of water to a boil, add eggs, and cook for 10 minutes.
- Transfer eggs immediately to an ice bath for 5 minutes, then peel and set aside.
- Melt herb butter in a large pan over medium heat and stir in minced garlic.
- Add diced onions to the pan and sauté for 3 minutes until softened.
- Pour in vegetable broth and stir in all dry seasonings; simmer the sauce for 3 minutes.
- Add peeled eggs to the pan and coat thoroughly with the sauce.
- Cut eggs in half while in the pan, spooning extra sauce over each piece before serving.
