Moist lemon pound cake infused with 7-Up and finished with a zesty citrus glaze.

Ingredients

  • 1 box (approx. 15.25 oz) lemon cake mix
  • 1 packet (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1 cup up soda
  • 1 cup melted butter
  • 2 cup powdered sugar (for the glaze)
  • 2 tbsp lime juice (for the glaze)
  • 2 tbsp up soda (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the lemon cake mix, lemon pudding mix, eggs, melted butter, and 1 cup of 7-Up in a large bowl and mix until smooth.
  3. Thoroughly grease a pound cake pan with butter spray, using a brush to ensure all corners are coated.
  4. Pour the batter into the prepared pan and tap the sides to remove air bubbles.
  5. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan.
  7. Whisk together the powdered sugar, lime juice, and 2 tablespoons of 7-Up in a bowl until thick and smooth.
  8. Invert the cooled cake onto a serving plate and drizzle the glaze over the top.
