Stir-Fried Bacon and String Beans by Couldeattbh

Crispy stir-fried string beans and cabbage tossed with savory bacon, aromatic lemongrass, and tangy fish sauce.

Ingredients
- 450g (1 lb) string beans, trimmed
- 150g (5 oz) bacon, chopped
- 150g (5 oz) cabbage, shredded
- 1 stalk lemongrass, finely minced
- 1 tbsp shaoxing cooking wine
- 2 tbsp fish sauce
- 1 tsp sugar
- 1 tbsp chili oil or fresh chili, chopped
- 2 tbsp neutral cooking oil
Instructions
- Heat 1 tbsp oil in a wok or large skillet over medium-high heat and add string beans, frying slowly for 6-8 minutes until the skin blisters and most water is released.
- Push beans to the side, add the chopped bacon to the pan, and sauté for 3-4 minutes until crispy and rendered.
- Add the shredded cabbage and minced lemongrass, tossing everything together for 2 minutes until the cabbage begins to wilt.
- Stir in the cooking wine, fish sauce, sugar, and chili, tossing for 1-2 minutes until well combined and the flavors are fragrant.
- Remove from heat and serve immediately while the beans are still slightly crisp.
