Steamed Pork Belly with Black Beans by Couldeattbh

Tender pork belly and absorbent fried tofu steamed in a savory, umami-rich fermented black bean sauce.

Ingredients

  • 1.5 lb pork belly, sliced into bite-sized pieces
  • 200g (7 oz) fried tofu, cubed
  • 2 tbsp fermented black beans, rinsed and roughly chopped
  • 4 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp shaoxing wine
  • 1 tsp sugar
  • 1 tbsp cornstarch
  • 1 tbsp neutral oil

Instructions

  1. Combine sliced pork belly, fermented black beans, minced garlic, soy sauce, oyster sauce, shaoxing wine, sugar, cornstarch, and oil in a large bowl.
  2. Mix thoroughly until the pork is evenly coated in the marinade and let sit for 10 minutes.
  3. Arrange the cubed fried tofu in an even layer at the bottom of a heat-proof steaming dish.
  4. Spread the marinated pork belly evenly over the top of the tofu.
  5. Place the dish into a steamer set over boiling water, cover, and steam for 15 minutes until the pork is tender and cooked through.
  6. Remove carefully from the steamer and serve hot.
