Crispy breaded pork cutlet simmered in a savory dashi, soy, and mirin sauce with soft eggs.

Ingredients
- 2 pork chops, boneless
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 yellow onion, thinly sliced
- 1/2 cup dashi stock
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp vegetable oil (for frying)
- 1 tbsp fresh chives, chopped (for garnish)
Instructions
- Dredge the pork chops in flour, dip into half of the beaten egg, and coat thoroughly with panko breadcrumbs.
- Heat vegetable oil in a skillet over medium-high heat and shallow fry the pork chops for 3-4 minutes per side until golden brown and crispy.
- Remove pork from the pan, slice into strips, and set aside.
- In the same skillet, combine the sliced onion, dashi, soy sauce, and mirin, bringing to a simmer over medium heat for 3-5 minutes until onions are translucent.
- Place the sliced pork cutlets into the simmering sauce, pour the remaining beaten egg over the top, and cover with a lid for 1-2 minutes until the egg is just set.
- Serve immediately over a bowl of steamed rice, topped with fresh chives.
