Crispy fried chicken smashed with spicy sambal chili sauce, a staple of Indonesian street food.

Ingredients

  • 4 chicken thighs, boneless and skinless
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 2 cup vegetable oil (for frying)
  • 1/2 cup sambal oelek (or homemade chili paste)

Instructions

  1. Whisk together flour, cornstarch, garlic powder, and salt in a shallow bowl
  2. Dip each chicken thigh into the beaten egg, then coat thoroughly in the flour mixture, pressing to adhere.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C).
  4. Fry chicken thighs for 6-8 minutes per side until golden brown and cooked through.
  5. Drain chicken on a wire rack or paper towels for 2 minutes.
  6. Place the fried chicken on a plate or mortar, top with sambal, and smash with a pestle or fork until the meat is slightly shredded and coated in chili.
