Crispy fried chicken smashed with spicy sambal chili sauce, a staple of Indonesian street food.

Ingredients
- 4 chicken thighs, boneless and skinless
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp garlic powder
- 1/2 tsp salt
- 2 eggs, beaten
- 2 cup vegetable oil (for frying)
- 1/2 cup sambal oelek (or homemade chili paste)
Instructions
- Whisk together flour, cornstarch, garlic powder, and salt in a shallow bowl
- Dip each chicken thigh into the beaten egg, then coat thoroughly in the flour mixture, pressing to adhere.
- Heat vegetable oil in a deep skillet to 350°F (175°C).
- Fry chicken thighs for 6-8 minutes per side until golden brown and cooked through.
- Drain chicken on a wire rack or paper towels for 2 minutes.
- Place the fried chicken on a plate or mortar, top with sambal, and smash with a pestle or fork until the meat is slightly shredded and coated in chili.
