Crunchy air-fried bow tie pasta tossed with fresh garden vegetables and a creamy yogurt dressing.

Ingredients

  • 450g (1 box) protein bow tie pasta
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1/2 tbsp italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 large cucumber, chopped
  • 250g (1 cup) grape tomatoes, halved
  • 1/2 small red onion, diced
  • 150g (3 cup) lettuce, chopped
  • 1/2 cup greek yogurt
  • 1/2 tbsp garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. Cook the pasta in boiling water according to package directions, then drain thoroughly over medium heat until softened, about 5 min.
  2. Toss the cooked pasta in a bowl with olive oil, paprika, Italian seasoning, salt, and pepper until evenly coated.
  3. Air fry the seasoned pasta at 375°F (190°C) for 10-15 minutes, shaking the basket halfway through until golden and crispy.
  4. Prepare the vegetables by chopping the cucumber, halving the tomatoes, and dicing the red onion.
  5. Whisk together Greek yogurt, minced garlic, lemon juice, and a pinch of salt and pepper in a small bowl to create the dressing.
  6. Combine the lettuce, cucumber, tomatoes, red onion, and crispy pasta in a large serving bowl.
  7. Pour the yogurt dressing over the salad and toss everything together until well coated before serving.
