Chipotle Taco Pasta by Cookingwithmurph
Savory ground beef tossed with protein pasta in a creamy, smoky chipotle-taco sauce.

Ingredients
- 285g (10 oz) protein pasta
- 450g (1 lb) lean ground beef
- 1 packet taco seasoning
- 60ml (1/4 cup) sour cream (plus extra for garnish)
- 3 tbsp chipotle sauce
- 60ml (1/4 cup) pasta water (reserved)
- 50g (1/2 cup) sharp cheddar cheese, shredded (for garnish)
- 1 medium tomato, diced (for garnish)
- 1 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente, about 8-10 minutes.
- Reserve 1/4 cup of pasta water before draining the pasta.
- Heat a large skillet over medium-high heat, add ground beef, and cook until browned, about 5-7 minutes.
- Drain excess fat from the skillet, then stir in the taco seasoning and a splash of water as directed on the packet.
- Reduce heat to low and stir in the sour cream, chipotle sauce, and reserved pasta water until smooth and creamy, about 2 minutes.
- Combine the cooked pasta and beef mixture in a large mixing bowl, tossing well to coat.
- Plate the pasta and top with shredded cheddar, diced tomatoes, a dollop of sour cream, and fresh cilantro.
