Ingredients

  • 4 chicken breasts
  • 1 lb potatoes, diced
  • 2 cans (15 oz each) green beans, drained
  • 2 sticks (1 cup) unsalted butter, melted
  • 2 packets (1 oz each) italian dressing and recipe mix
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper on both sides and place them into a casserole dish.
  3. Melt one stick of butter in a microwave-safe bowl and stir in one packet of Italian dressing mix until combined.
  4. Pour the herb butter mixture over the chicken breasts, coating them evenly.
  5. In a second casserole dish, add the diced potatoes to one side and the drained green beans to the other.
  6. Melt the second stick of butter in a microwave-safe bowl and stir in the second packet of Italian dressing mix
  7. Pour the remaining herb butter over the potatoes and green beans, tossing them gently to ensure they are fully coated.
  8. Bake both dishes in the preheated oven for 35 to 45 minutes, or until the chicken is cooked through and potatoes are tender.
