Hearty Italian sausage and cheese-filled tortellini simmered in a velvet-smooth, herb-infused creamy tomato broth.

Ingredients

  • 450g (1 lb) italian sausage, casings removed
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp all-purpose flour
  • 1 l (4 cup) chicken broth
  • 400g (14 oz) crushed tomatoes
  • 250g (9 oz) cheese tortellini (fresh or frozen)
  • 1/2 cup heavy cream
  • 2 cup fresh baby spinach
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes

Instructions

  1. Brown the sausage in a large pot over medium-high heat for 6-8 minutes until cooked through, breaking it into small pieces.
  2. Add the diced onion and sauté for 4-5 minutes until translucent, then stir in the minced garlic for 1 minute until fragrant.
  3. Stir in the tomato paste and flour, cooking for 2 minutes to remove the raw flour taste.
  4. Pour in the chicken broth and crushed tomatoes, seasoning with oregano and red pepper flakes; bring to a gentle boil
  5. Reduce heat to low, add the tortellini, and simmer for 5-7 minutes or until the pasta is al dente.
  6. Stir in the heavy cream and fresh spinach, cooking for 2 minutes until the spinach is just wilted, then serve immediately.
