Creamy Sausage Tortellini Soup by Cookingwithkianaa
Hearty Italian sausage and cheese-filled tortellini simmered in a velvet-smooth, herb-infused creamy tomato broth.

Ingredients
- 450g (1 lb) italian sausage, casings removed
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp all-purpose flour
- 1 l (4 cup) chicken broth
- 400g (14 oz) crushed tomatoes
- 250g (9 oz) cheese tortellini (fresh or frozen)
- 1/2 cup heavy cream
- 2 cup fresh baby spinach
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
Instructions
- Brown the sausage in a large pot over medium-high heat for 6-8 minutes until cooked through, breaking it into small pieces.
- Add the diced onion and sauté for 4-5 minutes until translucent, then stir in the minced garlic for 1 minute until fragrant.
- Stir in the tomato paste and flour, cooking for 2 minutes to remove the raw flour taste.
- Pour in the chicken broth and crushed tomatoes, seasoning with oregano and red pepper flakes; bring to a gentle boil
- Reduce heat to low, add the tortellini, and simmer for 5-7 minutes or until the pasta is al dente.
- Stir in the heavy cream and fresh spinach, cooking for 2 minutes until the spinach is just wilted, then serve immediately.
