Baked Feta Pasta by Cookingwithayeh

Creamy baked feta pasta with roasted tomatoes, garlic, and basil.

Ingredients

  • 500 g cherry tomatoes
  • 8 garlic cloves, peeled
  • 180 g block feta cheese
  • 400 g pasta
  • 1/4 cup extra-virgin olive oil, plus more as needed
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 handful fresh basil leaves

Instructions

  1. Preheat the oven to 400°F (200°C) and place the cherry tomatoes and garlic in a baking dish.
  2. Drizzle with 1/4 cup olive oil, then season with oregano, salt, and pepper; toss lightly to coat.
  3. Nestle the feta block in the center of the dish and drizzle the top with a little more olive oil.
  4. Bake for 30 minutes, until the tomatoes burst and the feta is soft and lightly golden.
  5. Meanwhile, cook the pasta in salted boiling water until al dente, about 8 to 10 minutes; reserve 1/2 cup pasta water.
  6. Mash the roasted tomatoes, garlic, and feta together in the baking dish until creamy and combined.
  7. Stir in the drained pasta and a splash of reserved pasta water if needed to loosen the sauce.
  8. Finish with fresh basil and serve immediately while hot and creamy.
