Baked Feta Pasta by Cookingwithayeh
Creamy baked feta pasta with roasted tomatoes, garlic, and basil.

Ingredients
- 500 g cherry tomatoes
- 8 garlic cloves, peeled
- 180 g block feta cheese
- 400 g pasta
- 1/4 cup extra-virgin olive oil, plus more as needed
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 handful fresh basil leaves
Instructions
- Preheat the oven to 400°F (200°C) and place the cherry tomatoes and garlic in a baking dish.
- Drizzle with 1/4 cup olive oil, then season with oregano, salt, and pepper; toss lightly to coat.
- Nestle the feta block in the center of the dish and drizzle the top with a little more olive oil.
- Bake for 30 minutes, until the tomatoes burst and the feta is soft and lightly golden.
- Meanwhile, cook the pasta in salted boiling water until al dente, about 8 to 10 minutes; reserve 1/2 cup pasta water.
- Mash the roasted tomatoes, garlic, and feta together in the baking dish until creamy and combined.
- Stir in the drained pasta and a splash of reserved pasta water if needed to loosen the sauce.
- Finish with fresh basil and serve immediately while hot and creamy.
