Creamy tortellini pasta tossed with savory Italian sausage, sun-dried tomatoes, and fresh spinach in a rich sauce.

Ingredients

  • 450g (1 lb) italian sausage, casings removed
  • 500g (18 oz) cheese tortellini, refrigerated
  • 1 cup sun-dried tomatoes, chopped
  • 2 cup fresh spinach, chopped
  • 1 medium yellow onion, diced
  • 1 tbsp minced garlic
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp tony chachere's seasoning (or creole seasoning)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tsp italian seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Italian sausage in a large skillet over medium-high heat until no longer pink, about 6-8 minutes, then remove and set aside.
  2. Add butter to the same skillet and sauté diced onions until translucent, about 4-5 minutes.
  3. Stir in the spinach, minced garlic, and sun-dried tomatoes, cooking for 2-3 minutes until the spinach wilts.
  4. Pour in the chicken broth and heavy cream, then season with Tony's seasoning, garlic powder, onion powder, and black pepper.
  5. Stir in the tortellini and the cooked sausage, cover the skillet, and simmer for 5 minutes until the pasta is tender.
  6. Remove the lid and stir in the parmesan and mozzarella cheeses until melted and creamy.
  7. Top with smoked paprika, Italian seasoning, red pepper flakes, and fresh parsley before serving.
