Tuscan Sausage Tortellini by Cookingwitbritt
Creamy tortellini pasta tossed with savory Italian sausage, sun-dried tomatoes, and fresh spinach in a rich sauce.

Ingredients
- 450g (1 lb) italian sausage, casings removed
- 500g (18 oz) cheese tortellini, refrigerated
- 1 cup sun-dried tomatoes, chopped
- 2 cup fresh spinach, chopped
- 1 medium yellow onion, diced
- 1 tbsp minced garlic
- 2 cup chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1/2 cup shredded parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 tsp tony chachere's seasoning (or creole seasoning)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp italian seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Brown the Italian sausage in a large skillet over medium-high heat until no longer pink, about 6-8 minutes, then remove and set aside.
- Add butter to the same skillet and sauté diced onions until translucent, about 4-5 minutes.
- Stir in the spinach, minced garlic, and sun-dried tomatoes, cooking for 2-3 minutes until the spinach wilts.
- Pour in the chicken broth and heavy cream, then season with Tony's seasoning, garlic powder, onion powder, and black pepper.
- Stir in the tortellini and the cooked sausage, cover the skillet, and simmer for 5 minutes until the pasta is tender.
- Remove the lid and stir in the parmesan and mozzarella cheeses until melted and creamy.
- Top with smoked paprika, Italian seasoning, red pepper flakes, and fresh parsley before serving.
