Pan-seared salmon cubes glazed in a vibrant fusion of aromatic Thai curry and spicy jerk seasoning.

Ingredients

  • 600g (1.3 lb) salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tbsp red thai curry paste
  • 1 tbsp jerk seasoning
  • 2 tbsp neutral cooking oil
  • 1 tbsp honey or brown sugar
  • 1 tbsp lime juice
  • 1 tsp salt (adjust to taste)

Instructions

  1. Pat the salmon cubes dry with paper towels to ensure a better sear
  2. Whisk the Thai curry paste, jerk seasoning, honey, lime juice, and 1 tablespoon of oil in a medium bowl.
  3. Add the salmon cubes to the bowl and toss gently until evenly coated, then let marinate for 5 minutes.
  4. Heat the remaining tablespoon of oil in a large non-stick skillet over medium-high heat.
  5. Place the salmon bites in the skillet in a single layer, ensuring they are not overcrowded.
  6. Sear for 2-3 minutes per side until the edges are crispy and the salmon is cooked through and opaque.
