Pan-seared jerk-spiced salmon fillets wrapped in spinach tortillas with crisp romaine and creamy Caesar dressing.

Ingredients

  • 2 spinach wraps
  • 2 salmon fillets (6 oz each)
  • 2 tbsp garlic and herb butter
  • 1 tsp jerk seasoning
  • 1 tsp old bay seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp sazon
  • 0.5 lemon, juiced
  • 2 cup shredded romaine lettuce
  • 0.5 cup parmesan cheese, grated
  • 0.25 cup caesar crunch or crushed croutons
  • 4 tbsp caesar dressing
  • 0.25 tsp red pepper flakes

Instructions

  1. Pat salmon dry and season both sides with jerk seasoning, Old Bay, garlic powder, onion powder, black pepper, paprika, and Sazon.
  2. Heat garlic and herb butter in a skillet over medium-high heat. Add salmon and cook for 4-5 minutes per side until golden and cooked through. Squeeze fresh lemon juice over the top before removing from heat.
  3. In a mixing bowl, toss shredded romaine with Caesar dressing, parmesan cheese, red pepper flakes, and additional seasonings (garlic powder, onion powder, Sazon) to taste
  4. Warm the spinach wraps slightly in a pan or microwave to prevent cracking.
  5. Assemble the wraps by layering the seasoned salmon fillets, the Caesar salad mixture, and a generous sprinkle of Caesar crunch/croutons in the center.
  6. Fold in the sides of the wrap and roll tightly to secure. Serve immediately
