Ingredients
- 1.5 lb chicken breast, cubed
- 0.5 cup greek yogurt
- 2 tbsp lemon juice
- 1 tsp chicken bouillon
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp sazon seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp black pepper
- 0.25 tsp red pepper flakes
- 1 tsp italian seasoning
- 1 tbsp olive oil
- 2 cup basmati rice
- 1 tsp turmeric (for rice)
- 1 tsp chicken bouillon (for rice)
- 1 head romaine lettuce, chopped
- 1 cup cucumber, diced
- 0.25 cup red onion, diced
- 1 cup tomato, diced
- 0.5 cup feta cheese
- 0.5 cup greek yogurt (for sauce)
- 2 tbsp mayonnaise
- 2 cloves garlic, minced
- 1 tbsp lemon juice (for sauce)
- 1 tsp dill weed
Instructions
- In a bowl, mix yogurt, lemon juice, bouillon, and spices to create the chicken marinade; toss with cubed chicken breast and marinate for 15-30 minutes.
- Thread chicken onto skewers and grill or pan-sear over medium-high heat for 8-10 minutes until golden brown and cooked through.
- Cook basmati rice according to package instructions, stirring in the turmeric and chicken bouillon for color and flavor
- Combine all salad ingredients (lettuce, cucumber, onion, tomato, feta) in a large bowl and toss gently
- Whisk together the garlic sauce ingredients (yogurt, mayo, garlic, lemon, dill) until smooth.
- Assemble bowls by layering rice, salad, and chicken skewers, then drizzle generously with the garlic sauce.
