Ingredients

  • 1.5 lb chicken breast, cubed
  • 0.5 cup greek yogurt
  • 2 tbsp lemon juice
  • 1 tsp chicken bouillon
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp sazon seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 tsp italian seasoning
  • 1 tbsp olive oil
  • 2 cup basmati rice
  • 1 tsp turmeric (for rice)
  • 1 tsp chicken bouillon (for rice)
  • 1 head romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 0.25 cup red onion, diced
  • 1 cup tomato, diced
  • 0.5 cup feta cheese
  • 0.5 cup greek yogurt (for sauce)
  • 2 tbsp mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice (for sauce)
  • 1 tsp dill weed

Instructions

  1. In a bowl, mix yogurt, lemon juice, bouillon, and spices to create the chicken marinade; toss with cubed chicken breast and marinate for 15-30 minutes.
  2. Thread chicken onto skewers and grill or pan-sear over medium-high heat for 8-10 minutes until golden brown and cooked through.
  3. Cook basmati rice according to package instructions, stirring in the turmeric and chicken bouillon for color and flavor
  4. Combine all salad ingredients (lettuce, cucumber, onion, tomato, feta) in a large bowl and toss gently
  5. Whisk together the garlic sauce ingredients (yogurt, mayo, garlic, lemon, dill) until smooth.
  6. Assemble bowls by layering rice, salad, and chicken skewers, then drizzle generously with the garlic sauce.
