Spicy Creamy Cajun Chicken Pasta by Cookerru

Tender cajun-spiced chicken tossed with al dente pasta in a rich, velvety cream sauce.

Ingredients

  • 500g (1.1 lb) chicken breast, cut into bite-sized pieces
  • 400g (14 oz) penne pasta
  • 2 tbsp cajun seasoning
  • 1 yellow onion, finely diced
  • 3 cloves garlic, minced
  • 250ml (1 cup) heavy cream
  • 50g (1/2 cup) parmesan cheese, grated
  • 2 tbsp olive oil
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Boil a large pot of salted water and cook penne according to package directions until al dente, about 8-10 minutes.
  2. Toss chicken pieces with 1 tablespoon of cajun seasoning in a bowl until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat and sear chicken for 5-6 minutes until golden and cooked through; remove from pan.
  4. Add diced onion to the same skillet and sauté for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute until fragrant.
  5. Pour in heavy cream and remaining cajun seasoning, simmering for 3 minutes until slightly thickened.
  6. Stir in parmesan cheese until melted and smooth, then return chicken to the pan and toss in the cooked pasta until well coated.
  7. Serve immediately while hot, adding extra parmesan if desired
