Spicy Creamy Cajun Chicken Pasta by Cookerru

Tender cajun-spiced chicken tossed with al dente pasta in a rich, velvety cream sauce.

Ingredients
- 500g (1.1 lb) chicken breast, cut into bite-sized pieces
- 400g (14 oz) penne pasta
- 2 tbsp cajun seasoning
- 1 yellow onion, finely diced
- 3 cloves garlic, minced
- 250ml (1 cup) heavy cream
- 50g (1/2 cup) parmesan cheese, grated
- 2 tbsp olive oil
- 1/2 tsp salt (adjust to taste)
Instructions
- Boil a large pot of salted water and cook penne according to package directions until al dente, about 8-10 minutes.
- Toss chicken pieces with 1 tablespoon of cajun seasoning in a bowl until evenly coated.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 5-6 minutes until golden and cooked through; remove from pan.
- Add diced onion to the same skillet and sauté for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and remaining cajun seasoning, simmering for 3 minutes until slightly thickened.
- Stir in parmesan cheese until melted and smooth, then return chicken to the pan and toss in the cooked pasta until well coated.
- Serve immediately while hot, adding extra parmesan if desired
