Layered vintage Jell-O salad with fruit, a cooked pineapple custard, and a Dream Whip cream cheese topping.

Ingredients

  • 6 oz box orange Jell-O
  • 6 oz lemon Jell-O (two 3-oz boxes)
  • 3 cups water
  • 3 bananas, sliced
  • 1 cup mini marshmallows
  • 1 cup pineapple tidbits (from two 8-oz cans, juice reserved)
  • 1 cup pineapple juice (reserved from cans, topped off with canned juice if needed)
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 large egg, beaten
  • 1 box Dream Whip, prepared as directed on box
  • 3 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Bring 3 cups of water to a boil in a saucepan, then turn off the heat. Add orange and lemon Jell-O powders and stir for about 2 minutes until fully dissolved.
  2. Pour the dissolved Jell-O into a 9x13 pan and let it cool to room temperature on the counter — do not refrigerate yet.
  3. Once the Jell-O is at room temperature, stir in the sliced bananas, pineapple tidbits, and mini marshmallows, pressing them gently into the Jell-O with a spatula. Refrigerate until fully set, about 2–3 hours.
  4. While the first layer sets, whisk together the sugar and flour in a saucepan. Add the pineapple juice and beaten egg, whisking to combine.
  5. Cook the pineapple mixture over medium heat, stirring constantly, until thickened to a pudding-like consistency, about 8–10 minutes. Remove from heat and let cool to near room temperature.
  6. Spread the cooled pineapple custard layer evenly over the set Jell-O layer using the back of a spoon. Return to the refrigerator to firm up, about 30 minutes.
  7. Prepare Dream Whip according to package directions. Beat the softened cream cheese and powdered sugar together until smooth, then fold into the prepared Dream Whip until combined.
  8. Spread the Dream Whip cream cheese topping evenly over the custard layer. Sprinkle 1 cup of shredded sharp cheddar cheese evenly over the top.
  9. Refrigerate until fully set and chilled, at least 1 hour, before serving.
