Mini Chocolate Chip Skillet Cookie by Coley Cooks

Dense, chewy skillet cookie with crisp buttery edges and pools of melted chocolate throughout.

Ingredients
- 4 tbsp unsalted butter, melted (or browned)
- 1/4 cup light brown sugar, packed
- 2 tbsp granulated sugar
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1/3 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 6-inch mini cast iron skillet.
- Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until smooth.
- Add the egg yolk and vanilla extract to the butter mixture, whisking until fully combined.
- Fold in the flour, baking soda, and salt using a spatula until just incorporated, being careful not to overmix.
- Stir in the chocolate chips, reserving a few for topping if desired.
- Press the dough into the prepared skillet and bake for 12-15 minutes, or until the edges are golden brown and the center is set but still soft.
- Remove from the oven and let cool for 5 minutes before serving warm.
