Mini Chocolate Chip Skillet Cookie by Coley Cooks

Dense, chewy skillet cookie with crisp buttery edges and pools of melted chocolate throughout.

Ingredients

  • 4 tbsp unsalted butter, melted (or browned)
  • 1/4 cup light brown sugar, packed
  • 2 tbsp granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 6-inch mini cast iron skillet.
  2. Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until smooth.
  3. Add the egg yolk and vanilla extract to the butter mixture, whisking until fully combined.
  4. Fold in the flour, baking soda, and salt using a spatula until just incorporated, being careful not to overmix.
  5. Stir in the chocolate chips, reserving a few for topping if desired.
  6. Press the dough into the prepared skillet and bake for 12-15 minutes, or until the edges are golden brown and the center is set but still soft.
  7. Remove from the oven and let cool for 5 minutes before serving warm.
