Creamy Cajun Jambalaya Pasta by Clubbkitchenbykiaj
Spicy Cajun-inspired pasta tossed with seared chicken, smoked sausage, and succulent shrimp in a creamy sauce.

Ingredients
- 450g (1 lb) penne or fettuccine pasta
- 450g (1 lb) chicken breast, diced
- 225g (8 oz) andouille or smoked sausage, sliced
- 225g (8 oz) large shrimp, peeled and deveined
- 2 tbsp cajun seasoning
- 1 large yellow onion, diced
- 2 bell peppers (1 red, 1 green), diced
- 3 cloves garlic, minced
- 240ml (1 cup) heavy cream
- 240ml (1 cup) chicken broth
- 50g (1/2 cup) parmesan cheese, grated
- 2 tbsp olive oil
Instructions
- Boil pasta in salted water according to package directions until al dente, about 8-10 minutes, then drain.
- Season chicken and shrimp with 1 tablespoon of Cajun seasoning in a bowl.
- Heat olive oil in a large skillet over medium-high heat, then sear chicken and sausage until browned, about 5-7 minutes.
- Add diced onion and bell peppers to the skillet, cooking for 4-5 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add the shrimp to the pan and cook for 2-3 minutes until pink and opaque.
- Pour in chicken broth and heavy cream, stirring in the remaining tablespoon of Cajun seasoning, and simmer for 3 minutes to thicken.
- Fold in the cooked pasta and parmesan cheese, tossing until well coated and creamy, about 1-2 minutes.
