Spicy Cajun-inspired pasta tossed with seared chicken, smoked sausage, and succulent shrimp in a creamy sauce.

Ingredients

  • 450g (1 lb) penne or fettuccine pasta
  • 450g (1 lb) chicken breast, diced
  • 225g (8 oz) andouille or smoked sausage, sliced
  • 225g (8 oz) large shrimp, peeled and deveined
  • 2 tbsp cajun seasoning
  • 1 large yellow onion, diced
  • 2 bell peppers (1 red, 1 green), diced
  • 3 cloves garlic, minced
  • 240ml (1 cup) heavy cream
  • 240ml (1 cup) chicken broth
  • 50g (1/2 cup) parmesan cheese, grated
  • 2 tbsp olive oil

Instructions

  1. Boil pasta in salted water according to package directions until al dente, about 8-10 minutes, then drain.
  2. Season chicken and shrimp with 1 tablespoon of Cajun seasoning in a bowl.
  3. Heat olive oil in a large skillet over medium-high heat, then sear chicken and sausage until browned, about 5-7 minutes.
  4. Add diced onion and bell peppers to the skillet, cooking for 4-5 minutes until softened.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Add the shrimp to the pan and cook for 2-3 minutes until pink and opaque.
  7. Pour in chicken broth and heavy cream, stirring in the remaining tablespoon of Cajun seasoning, and simmer for 3 minutes to thicken.
  8. Fold in the cooked pasta and parmesan cheese, tossing until well coated and creamy, about 1-2 minutes.
