GF Overnight PB Banana Weet-Bix by Clean Kweens Dietitians

Cocoa-infused wheat biscuit base layered with sliced bananas and a smooth honey-sweetened Greek yoghurt topping.

Ingredients

  • 8 gluten free weet-bix, crushed
  • 1.5 cup lite milk
  • 1 tbsp chia seeds
  • 1 tbsp cocoa powder
  • 1 tbsp peanut butter
  • 2 bananas, sliced
  • 1 cup reduced fat greek yoghurt
  • 1 tbsp honey
  • 0.5 tsp cocoa powder for dusting

Instructions

  1. Combine crushed Weet-Bix, milk, chia seeds, 1 tbsp cocoa powder, and 1 tbsp peanut butter in a bowl.
  2. Press the mixture firmly into a dish to form an even base.
  3. Refrigerate for 15 minutes to allow the base to set.
  4. Arrange the sliced bananas in an even layer over the set base.
  5. Whisk the Greek yoghurt and honey together in a small bowl until smooth.
  6. Spread the yoghurt mixture evenly over the banana layer.
  7. Drizzle the remaining tablespoon of peanut butter over the top of the yoghurt.
  8. Dust with extra cocoa powder and refrigerate for at least 4 hours, or overnight, before serving.
