Easiest GF Orange & Almond Loaf by Clean Kweens Dietitians

Easiest GF Orange Almond Loaf with whole orange honey and milk finished with fresh herbs and citrus.

Ingredients

  • 1 whole orange, quartered, seeds removed
  • 1/2 cup honey
  • 1/2 cup milk
  • 1/4 cup oil
  • 2 eggs
  • 2 tsp baking powder
  • 2 1/2 cups almond meal
  • 1/4 cup slivered almonds
  • to taste icing sugar for topping (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Place the quartered orange (seeds removed) into a blender. Blitz until completely smooth, about 30-60 seconds.
  3. Add the honey, milk, oil, eggs, and baking powder to the blender with the orange.
  4. Blend again until all ingredients are fully combined, about another 30 seconds.
  5. Pour the wet mixture from the blender into a large bowl. Add the almond meal and fold it in gently with a spatula until just combined. Be careful not to overmix.
  6. Pour the batter evenly into a lined loaf tin (approx. 9x5 inch or similar size).
  7. Sprinkle the slivered almonds evenly over the top of the batter.
  8. Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean.
  9. Allow the loaf to cool completely in the tin before attempting to remove it. This prevents it from breaking.
  10. Optional: Dust with icing sugar just before slicing and serving for an extra touch.
