- 1/2 cup sofrito
- 225g (8 oz) tomato sauce
- 2 medium potatoes, peeled and diced into 1/2-inch cubes
- 1/4 cup pitted green olives, sliced
- 1 tbsp capers
- 1/2 tsp salt (adjust to taste)
- 1 tbsp vegetable oil
Instructions
- Heat oil in a large skillet over medium-high heat, then add ground beef and brown thoroughly for 6-8 minutes, breaking it into small crumbles.
- Stir in the sofrito and cook for 2-3 minutes until fragrant and the liquid has slightly reduced.
- Add the diced potatoes and tomato sauce, stirring to coat the meat evenly.
- Reduce heat to low, cover, and simmer for 15-20 minutes until the potatoes are fork-tender.
- Fold in the olives and capers, cooking for an additional 2 minutes to meld the flavors before serving.
