  • 1/2 cup sofrito
  • 225g (8 oz) tomato sauce
  • 2 medium potatoes, peeled and diced into 1/2-inch cubes
  • 1/4 cup pitted green olives, sliced
  • 1 tbsp capers
  • 1/2 tsp salt (adjust to taste)
  • 1 tbsp vegetable oil

Instructions

  1. Heat oil in a large skillet over medium-high heat, then add ground beef and brown thoroughly for 6-8 minutes, breaking it into small crumbles.
  2. Stir in the sofrito and cook for 2-3 minutes until fragrant and the liquid has slightly reduced.
  3. Add the diced potatoes and tomato sauce, stirring to coat the meat evenly.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes until the potatoes are fork-tender.
  5. Fold in the olives and capers, cooking for an additional 2 minutes to meld the flavors before serving.
