Authentic Dominican Mangú by Cicipalate

Silky mashed green plantains whipped with butter and salt, a staple of traditional Dominican breakfast.

Ingredients
- 4 large green plantains, peeled and cut into 2-inch chunks
- 1 tbsp salt (for boiling water)
- 4 tbsp unsalted butter, softened
- 1/2 cup reserved hot plantain boiling water
Instructions
- Place peeled plantain chunks in a large pot and cover with cold water by 2 inches.
- Add salt to the water and bring to a boil over high heat.
- Reduce heat to medium and simmer for 15-20 minutes until the plantains are fork-tender.
- Remove 1/2 cup of the cooking liquid and set aside, then drain the remaining water.
- Mash the plantains immediately while hot using a potato masher.
- Add the butter and small amounts of the reserved hot water, continuing to mash until the texture is smooth and creamy.
