Crispy, shredded green plantain fritters infused with fresh garlic and fried until golden brown.

Ingredients

  • 3 large green plantains, peeled
  • 3 tbsp garlic, minced
  • 1 tsp salt
  • 2 cup vegetable oil (for frying)

Instructions

  1. Peel the green plantains and grate them using the coarse side of a box grater into a large bowl.
  2. Stir the minced garlic and salt into the shredded plantains until thoroughly combined.
  3. Heat the vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).
  4. Scoop small, loose mounds of the plantain mixture (about 2 tablespoons each) and carefully drop them into the hot oil.
  5. Fry for 3-4 minutes, turning occasionally, until the plantains are golden brown and crispy.
  6. Remove the fritters with a slotted spoon and drain on a paper towel-lined plate before serving warm.
