Layered coconut agar agar jelly infused with fragrant pandan leaves for a firm, chilled dessert finish.

Ingredients

  • 1/2 cup sugar
  • 2 tsp agar agar powder
  • 1/4 tsp salt
  • 1 pandan leaf
  • 1.5 cup coconut water
  • 1 cup coconut milk
  • 1/4 cup sugar (for second layer)
  • 1 tsp agar agar powder (for second layer)
  • 1 pandan leaf (for second layer)
  • 1.5 cup coconut water (for second layer)

Instructions

  1. In a pot, combine sugar, agar agar, salt, 1 pandan leaf, coconut water, and coconut milk; stir and bring to a boil
  2. Remove pandan leaf, pour the mixture into a mold or cake pan, and let sit at room temperature until tacky.
  3. For the second layer, combine sugar, agar agar, 1 pandan leaf, and coconut water in a pot; bring to a boil
  4. Remove pandan leaf and carefully pour the second layer over the first layer.
  5. Let it sit at room temperature until solidified, then cover with foil and refrigerate overnight.
  6. Remove from the pan and cut into bite-sized chunks to serve.
