Auntie-Style Coconut Agar Agar Jello by Chercreations

Layered coconut agar agar jelly infused with fragrant pandan leaves for a firm, chilled dessert finish.

Ingredients
- 1/2 cup sugar
- 2 tsp agar agar powder
- 1/4 tsp salt
- 1 pandan leaf
- 1.5 cup coconut water
- 1 cup coconut milk
- 1/4 cup sugar (for second layer)
- 1 tsp agar agar powder (for second layer)
- 1 pandan leaf (for second layer)
- 1.5 cup coconut water (for second layer)
Instructions
- In a pot, combine sugar, agar agar, salt, 1 pandan leaf, coconut water, and coconut milk; stir and bring to a boil
- Remove pandan leaf, pour the mixture into a mold or cake pan, and let sit at room temperature until tacky.
- For the second layer, combine sugar, agar agar, 1 pandan leaf, and coconut water in a pot; bring to a boil
- Remove pandan leaf and carefully pour the second layer over the first layer.
- Let it sit at room temperature until solidified, then cover with foil and refrigerate overnight.
- Remove from the pan and cut into bite-sized chunks to serve.
