The Famous Nordstrom Tomato Soup by Chelseasmessyapron

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 (28 oz) cans crushed tomatoes
  • 4 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • 4 slices bread
  • 2 tbsp butter, melted
  • 1 clove garlic, minced

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat and cook for 15-20 minutes, allowing flavors to meld.
  4. Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth. Return soup to the pot.
  5. Stir in heavy cream and sugar. Season with salt and pepper to taste. Heat gently but do not boil
  6. While soup simmers, prepare crostini: Preheat oven to 375°F (190°C).
  7. Mix melted butter with minced garlic
  8. Cook brush garlic butter mixture onto both sides of bread slices over medium heat.
  9. Arrange bread slices on a baking sheet and bake for 8-10 minutes, or until golden brown and crisp.
  10. Serve hot soup topped with garlic bread crostini
