The Famous Nordstrom Tomato Soup by Chelseasmessyapron
rich, creamy, and iconic tomato soup served with a crispy, flavorful garlic bread crostini.

Ingredients
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 2 (28 oz) cans crushed tomatoes
- 4 cup vegetable broth
- 1/2 cup heavy cream
- 1 tsp sugar
- 4 slices bread
- 2 tbsp butter, melted
- 1 clove garlic, minced
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat and cook for 15-20 minutes, allowing flavors to meld.
- Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth. Return soup to the pot.
- Stir in heavy cream and sugar. Season with salt and pepper to taste. Heat gently but do not boil
- While soup simmers, prepare crostini: Preheat oven to 375°F (190°C).
- Mix melted butter with minced garlic
- Cook brush garlic butter mixture onto both sides of bread slices over medium heat.
- Arrange bread slices on a baking sheet and bake for 8-10 minutes, or until golden brown and crisp.
- Serve hot soup topped with garlic bread crostini
