Flaky, tender cod fillets topped with a golden, buttery herb and parmesan breadcrumb crust.

Ingredients

  • 4 (6 oz) cod fillets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup parmesan cheese, grated
  • 3 tbsp unsalted butter, melted
  • 1 tbsp lemon juice, fresh
  • 1 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the cod fillets dry with paper towels and place them on the prepared baking sheet
  3. Whisk together the melted butter, lemon juice, garlic powder, salt, and pepper in a small bowl
  4. Brush the butter mixture evenly over the top of each cod fillet
  5. Combine the panko breadcrumbs, parmesan cheese, and parsley in a separate bowl, then sprinkle generously over the fish
  6. Bake for 12-15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
