Flaky, tender cod fillets topped with a golden, buttery herb and parmesan breadcrumb crust.

Ingredients
- 4 (6 oz) cod fillets
- 1/2 cup panko breadcrumbs
- 1/4 cup parmesan cheese, grated
- 3 tbsp unsalted butter, melted
- 1 tbsp lemon juice, fresh
- 1 tsp garlic powder
- 1/2 tsp dried parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the cod fillets dry with paper towels and place them on the prepared baking sheet
- Whisk together the melted butter, lemon juice, garlic powder, salt, and pepper in a small bowl
- Brush the butter mixture evenly over the top of each cod fillet
- Combine the panko breadcrumbs, parmesan cheese, and parsley in a separate bowl, then sprinkle generously over the fish
- Bake for 12-15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
