Crispy fried eggs glazed in a savory sweet soy sauce reduction with garlic and green onions.

Ingredients

  • 4 large eggs
  • 4 tbsp olive oil
  • 3 green onions
  • 3 cloves garlic
  • 2 tbsp sweet soy sauce
  • 1 tbsp soy sauce
  • 2 tbsp water
  • 1 tsp chili oil

Instructions

  1. Heat 3 tablespoons of olive oil in a pan over medium-high heat until shimmering.
  2. Crack eggs into the hot oil and fry until the edges are crispy and golden, about 2 minutes; remove and set aside.
  3. Add the remaining tablespoon of oil to the same pan, then add minced garlic and sliced green onions, sautéing for 1 minute until fragrant.
  4. Pour in the sweet soy sauce, soy sauce, and water, stirring to create a thin glaze.
  5. Return the fried eggs to the pan, coating them thoroughly in the sauce for 30 seconds.
  6. Transfer to a plate and drizzle with chili oil before serving.
