Flavor-Packed Salmon Burgers with Harissa Slaw by Cheffinwithzach
Quick, herb-forward salmon patties paired with spicy harissa mayo and a crisp, refreshing fennel slaw.

Ingredients
- 1.5 lb salmon fillets, skin removed
- 0.5 cup fresh herbs (parsley, cilantro, dill), chopped
- 1 tsp garlic powder
- 0.5 cup panko breadcrumbs
- 0.5 cup mayonnaise
- 2 tbsp harissa paste
- 1 fennel bulb, thinly shaved
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 4 burger buns
Instructions
- Place salmon, herbs, garlic powder, and panko in a food processor; pulse 5-8 times until coarsely ground but not pureed.
- Form the mixture into 4 patties and chill for 10 minutes to help them hold their shape.
- Whisk together mayonnaise and harissa paste in a small bowl until smooth.
- Toss the shaved fennel with lemon juice and a pinch of salt in a medium bowl
- Heat olive oil in a large skillet over medium-high heat; cook patties for 3-4 minutes per side until golden brown and opaque throughout.
- Toast buns and assemble by spreading harissa mayo on the base, topping with the salmon patty, and finishing with the fennel slaw.
