Quick, herb-forward salmon patties paired with spicy harissa mayo and a crisp, refreshing fennel slaw.

Ingredients

  • 1.5 lb salmon fillets, skin removed
  • 0.5 cup fresh herbs (parsley, cilantro, dill), chopped
  • 1 tsp garlic powder
  • 0.5 cup panko breadcrumbs
  • 0.5 cup mayonnaise
  • 2 tbsp harissa paste
  • 1 fennel bulb, thinly shaved
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 4 burger buns

Instructions

  1. Place salmon, herbs, garlic powder, and panko in a food processor; pulse 5-8 times until coarsely ground but not pureed.
  2. Form the mixture into 4 patties and chill for 10 minutes to help them hold their shape.
  3. Whisk together mayonnaise and harissa paste in a small bowl until smooth.
  4. Toss the shaved fennel with lemon juice and a pinch of salt in a medium bowl
  5. Heat olive oil in a large skillet over medium-high heat; cook patties for 3-4 minutes per side until golden brown and opaque throughout.
  6. Toast buns and assemble by spreading harissa mayo on the base, topping with the salmon patty, and finishing with the fennel slaw.
