Ingredients

  • 450g (1 lb) ground beef (80/20 lean-to-fat ratio)
  • 4 slices american cheese
  • 2 brioche or potato burger buns
  • 1/4 cup white onion, finely diced
  • 1/4 cup dill pickle slices
  • 2 tbsp yellow mustard
  • 2 tbsp ketchup
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Divide the ground beef into 4 equal portions and gently roll into loose balls without overworking the meat.
  2. Heat a cast-iron skillet over medium-high heat until smoking slightly, about 3-4 minutes.
  3. Place the meat balls into the hot skillet and immediately smash them flat using a heavy spatula until about 1/4-inch thick.
  4. Season the patties generously with salt and pepper and sear for 2-3 minutes until a deep brown crust forms.
  5. Flip the patties, top each with a slice of American cheese, and cook for another 1-2 minutes until the cheese is melted.
  6. Toast the burger buns in the same skillet for 30-60 seconds until golden brown.
  7. Assemble the burgers by layering the patties on the buns, then topping with diced onions, pickles, mustard, and ketchup.
