Ingredients
- 450g (1 lb) ground beef (80/20 lean-to-fat ratio)
- 4 slices american cheese
- 2 brioche or potato burger buns
- 1/4 cup white onion, finely diced
- 1/4 cup dill pickle slices
- 2 tbsp yellow mustard
- 2 tbsp ketchup
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Divide the ground beef into 4 equal portions and gently roll into loose balls without overworking the meat.
- Heat a cast-iron skillet over medium-high heat until smoking slightly, about 3-4 minutes.
- Place the meat balls into the hot skillet and immediately smash them flat using a heavy spatula until about 1/4-inch thick.
- Season the patties generously with salt and pepper and sear for 2-3 minutes until a deep brown crust forms.
- Flip the patties, top each with a slice of American cheese, and cook for another 1-2 minutes until the cheese is melted.
- Toast the burger buns in the same skillet for 30-60 seconds until golden brown.
- Assemble the burgers by layering the patties on the buns, then topping with diced onions, pickles, mustard, and ketchup.
