Ingredients

  • 1 large spiny lobster tail
  • 4 oz salted butter, room temperature
  • 2 1/2 tbsp honey
  • 1 tsp paprika
  • 1/2 tsp fine salt, plus more to taste
  • 1 tbsp chopped parsley
  • 1 tsp neutral oil, for the pan or baking tray

Instructions

  1. Preheat the oven to 425°F convection or 450°F conventional and line a baking tray with foil, about 5 minutes.
  2. Prepare the lobster tail as shown in the video, then lightly season the meat with salt, about 1 minute.
  3. Melt the butter over medium heat, then whisk in the honey and paprika until smooth, about 2 minutes.
  4. Brush the lobster generously with the honey butter, then bake until the meat is opaque and the internal temperature reaches 140°F, about 7 minutes.
  5. While the lobster bakes, bring the remaining honey butter to a brief boil, about 1 minute, to cook off any raw lobster contact.
  6. Brush the lobster again with the hot butter as soon as it comes out of the oven, then repeat once more for a glossy finish.
  7. Stir the parsley into the butter, spoon the remaining sauce over the lobster, and serve immediately.
