French Onion Mac & Cheese by Carolbeecooks
Creamy pasta shells enveloped in a rich, caramelized onion sauce with a golden, melted cheese crust.

Ingredients
- 450g (1 lb) macaroni or shell pasta
- 3 large yellow onions, thinly sliced
- 4 tbsp unsalted butter
- 2 cup beef broth
- 1 tsp fresh thyme leaves
- 2 cup gruyère cheese, shredded
- 1 cup sharp white cheddar, shredded
- 2 tbsp all-purpose flour
- 1 cup heavy cream
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
Instructions
- Melt butter in a large skillet over medium heat, add sliced onions, and cook for 20-25 minutes, stirring frequently until deeply caramelized and golden brown.
- Stir in flour and cook for 1-2 minutes until toasted, then gradually whisk in the beef broth and heavy cream, simmering for 5 minutes until thickened.
- Boil pasta in salted water for 2 minutes less than package instructions, then drain.
- Stir half of the cheese into the onion sauce until melted, fold in the cooked pasta, and season with thyme, salt, and pepper.
- Transfer the mixture to a baking dish, top with the remaining cheese, and bake at 200°C (400°F) for 10-15 minutes until the top is bubbling and golden.
