Creamy pasta shells enveloped in a rich, caramelized onion sauce with a golden, melted cheese crust.

Ingredients

  • 450g (1 lb) macaroni or shell pasta
  • 3 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 2 cup beef broth
  • 1 tsp fresh thyme leaves
  • 2 cup gruyère cheese, shredded
  • 1 cup sharp white cheddar, shredded
  • 2 tbsp all-purpose flour
  • 1 cup heavy cream
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. Melt butter in a large skillet over medium heat, add sliced onions, and cook for 20-25 minutes, stirring frequently until deeply caramelized and golden brown.
  2. Stir in flour and cook for 1-2 minutes until toasted, then gradually whisk in the beef broth and heavy cream, simmering for 5 minutes until thickened.
  3. Boil pasta in salted water for 2 minutes less than package instructions, then drain.
  4. Stir half of the cheese into the onion sauce until melted, fold in the cooked pasta, and season with thyme, salt, and pepper.
  5. Transfer the mixture to a baking dish, top with the remaining cheese, and bake at 200°C (400°F) for 10-15 minutes until the top is bubbling and golden.
