Rich, decadent chocolate cake with a molten, velvety interior and a delicate hint of orange.

Ingredients

  • 250g dark chocolate
  • 250g unsalted butter
  • 200g granulated sugar
  • 60g all-purpose flour
  • 6 large eggs
  • 1/2 tsp salt
  • 1 tsp orange zest

Instructions

  1. Melt the chocolate and butter together in a bain-marie until the mixture is smooth and homogeneous, then set aside to cool slightly.
  2. Whisk the eggs, sugar, and salt in a large bowl using an electric mixer until they double in volume and become fluffy.
  3. Sift the flour and gently fold it into the egg mixture
  4. Incorporate the tempered chocolate and butter mixture into the batter.
  5. Fold in the orange zest using gentle, wrapping motions to maintain the airiness of the batter
  6. Pour the batter into a greased and parchment-lined cake mold.
  7. Bake for 20 minutes at 180°C (350°F) until the edges are set but the center remains soft.
  8. Let the cake cool for 30 minutes before unmolding and serving while still slightly warm.
