Air Fryer Caprese Stuffed Mushrooms by Carlosbernalchef

Tender roasted mushrooms filled with juicy cherry tomatoes and melted mozzarella, finished with fresh basil.

Ingredients

  • 8 large mushrooms, cleaned with stems removed
  • 4 cherry tomatoes, halved
  • 125g (4.5 oz) fresh mozzarella, torn into small pieces
  • 2 tbsp extra virgin olive oil (divided)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)
  • 2 tbsp fresh basil leaves, torn
  • 1 tbsp pine nuts

Instructions

  1. Clean the mushrooms, remove the stems, and place them in the air fryer basket.
  2. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and air fry at 180°C (350°F) for 10 minutes.
  3. Remove from the air fryer and fill each mushroom cap with a cherry tomato half and a piece of mozzarella.
  4. Drizzle with a little extra olive oil, season with a pinch of salt and pepper, and return to the air fryer for 5 minutes until the cheese is melted and bubbly.
  5. Remove from the air fryer, top with fresh basil and pine nuts, and serve immediately.
