Chili Oil Peanut Noodles by Carleigh Bodrug
Silky noodles tossed in a savory, spicy peanut sauce with fragrant garlic and ginger aromatics.

Ingredients
- 200g (7 oz) ramen or wheat noodles
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp chili oil with flakes
- 1 tsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 2 tbsp hot pasta water
Instructions
- Boil a pot of water and cook noodles according to package instructions until tender, about 3-5 minutes.
- Whisk together peanut butter, soy sauce, chili oil, rice vinegar, ginger, and garlic in a medium bowl until smooth.
- Add 2 tablespoons of hot pasta water to the sauce mixture and whisk until creamy and emulsified.
- Drain the cooked noodles and transfer them directly into the bowl with the peanut sauce
- Toss the noodles thoroughly until evenly coated with the sauce, adding a splash more water if needed for consistency.
