Healthy Pasta Salad by Camille Styles

refreshing and vibrant pasta salad packed with fresh vegetables and a zesty lemon dressing.

Ingredients

  • 12 oz pasta
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper (any color), diced
  • 1/2 cup kalamata olives, pitted and halved
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook pasta according to package directions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  2. While pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, thinly slice the red onion, and halve the olives.
  3. In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, and olives.
  4. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing
  5. Pour the dressing over the pasta and vegetable mixture. Toss gently to combine.
  6. Add the crumbled feta cheese and chopped fresh parsley. Toss again to distribute evenly.
  7. Chill for at least 30 minutes before serving to allow flavors to meld.
