Healthy Pasta Salad by Camille Styles
refreshing and vibrant pasta salad packed with fresh vegetables and a zesty lemon dressing.

Ingredients
- 12 oz pasta
- 1 pint cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 bell pepper (any color), diced
- 1/2 cup kalamata olives, pitted and halved
- 4 oz feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package directions until al dente, about 8-10 minutes. Drain and rinse with cold water.
- While pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, thinly slice the red onion, and halve the olives.
- In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, and olives.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing
- Pour the dressing over the pasta and vegetable mixture. Toss gently to combine.
- Add the crumbled feta cheese and chopped fresh parsley. Toss again to distribute evenly.
- Chill for at least 30 minutes before serving to allow flavors to meld.
