Soft, fluffy leavened flatbread enriched with creamy yogurt and brushed with a rich melted butter finish.

Ingredients

  • 2 1/4 tsp active dry yeast
  • 1 tsp sugar
  • 1 cup warm water
  • 3 cup all-purpose flour
  • 2/3 cup plain whole milk yogurt
  • 2 tbsp olive oil
  • 0.5 tbsp salt
  • 4 tbsp melted butter
  • 1/2 tsp salt (for finishing)

Instructions

  1. Whisk active dry yeast, sugar, and 1/2 cup warm water in a bowl; let sit for 10 minutes until foamy.
  2. Combine yeast mixture, flour, yogurt, remaining 1/2 cup warm water, olive oil, and salt in a bowl.
  3. Knead the mixture by hand or stand mixer until cohesive and slightly sticky, about 5-8 minutes.
  4. Place dough in an oiled bowl, cover, and let rise for at least 1 hour until doubled in size.
  5. Turn dough onto a floured surface, fold 4-5 times, form into a ball, and divide into 6-8 equal portions
  6. Roll each portion into a circle, rotating 90 degrees every few rolls to maintain shape.
  7. Heat a cast iron skillet over high heat; place dough in pan and cook until large bubbles form.
  8. Flip and cook the other side until lightly charred, then remove and brush immediately with melted butter and a sprinkle of salt.
