Chicken Fajita Spaghetti Bake by Camcancoook

Spaghetti baked with tender chicken strips, sautéed bell peppers, and onions in a rich creamy sauce.

Ingredients
- 1.5 lb chicken breast, cut into strips
- 1 lb spaghetti
- 1.5 bell peppers, sliced
- 1 jalapeno, sliced
- 0.5 sweet onion, sliced
- 5 cloves garlic, minced
- 1 cup chicken broth
- 2.5 cup heavy cream
- 1 tbsp butter
- 0.5 cup parmesan cheese, freshly grated
- 2.5 cup oaxaca cheese, shredded
- 2 tbsp olive oil
- 1 lime, juiced
- 1 tbsp adobo seasoning
- 2 tsp chili powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 0.5 tsp ground cumin
- 1 tsp dried oregano
Instructions
- Marinate chicken strips in olive oil, 2 cloves chopped garlic, lime juice, and half of the fajita seasoning mix for 15 minutes.
- Boil spaghetti in salted water until just undercooked (al dente); drain and set aside.
- In a medium-high heat skillet, sear chicken strips until golden brown; remove from pan.
- Add onions, jalapeno, and bell peppers to the same skillet; cook until translucent.
- Stir in 3 cloves minced garlic and butter; deglaze with a splash of chicken broth.
- Return chicken to the pan, then add heavy cream, remaining broth, remaining fajita seasoning, and parmesan; simmer until the sauce thickens slightly.
- Toss the cooked spaghetti into the sauce mixture until well coated.
- Transfer to an oven-safe baking dish, layering with Oaxaca cheese.
- Bake at 375°F for 10-12 minutes, then broil on high for 5-8 minutes until the cheese is golden and crispy.
- Garnish with fresh cilantro before serving.
