Braised Cilantro Lime Chicken by Byrontalbott

Tender bone-in chicken thighs braised in a bright citrus, cumin, and fresh cilantro reduction.

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tbsp paprika
  • 2 tbsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 limes, juiced
  • 1 tsp lime zest
  • 1/2 onion, quartered
  • 4 garlic cloves, smashed
  • 1 cup cilantro, chopped

Instructions

  1. Pat the chicken thighs dry and season generously with salt, pepper, cumin, and paprika on all sides until ready to serve.
  2. Sear the chicken in a large skillet over medium-high heat for 5-7 minutes per side until the skin is golden brown.
  3. Remove the chicken from the pan and add the quartered onions and smashed garlic, sautéing for 3 minutes until fragrant.
  4. Pour in the lime juice and zest, scraping the bottom of the pan to release any browned bits.
  5. Return the chicken to the skillet, sprinkle with the chopped cilantro, and cover the pan over medium heat until heated through, about 5 min.
  6. Simmer on low heat for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
