Braised Cilantro Lime Chicken by Byrontalbott

Tender bone-in chicken thighs braised in a bright citrus, cumin, and fresh cilantro reduction.

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tbsp paprika
- 2 tbsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 3 limes, juiced
- 1 tsp lime zest
- 1/2 onion, quartered
- 4 garlic cloves, smashed
- 1 cup cilantro, chopped
Instructions
- Pat the chicken thighs dry and season generously with salt, pepper, cumin, and paprika on all sides until ready to serve.
- Sear the chicken in a large skillet over medium-high heat for 5-7 minutes per side until the skin is golden brown.
- Remove the chicken from the pan and add the quartered onions and smashed garlic, sautéing for 3 minutes until fragrant.
- Pour in the lime juice and zest, scraping the bottom of the pan to release any browned bits.
- Return the chicken to the skillet, sprinkle with the chopped cilantro, and cover the pan over medium heat until heated through, about 5 min.
- Simmer on low heat for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
