Creamy One-Pot Pasta by Byolyvv

Rich bacon and sun-dried tomato pasta finished with cream, Parmesan, and basil.

Ingredients
- 8 oz pasta
- 6 slices bacon, chopped
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 2 tbsp tomato paste
- 1/2 cup dry white wine
- 3 cups vegetable broth
- 1 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, torn
Instructions
- Cook the bacon in a large pot over medium heat for 5-7 minutes, until browned and crisp; leave about 1 tablespoon of fat in the pot.
- Add the onion and cook for 3-4 minutes, stirring, until softened, then stir in the garlic for 30 seconds until fragrant.
- Mix in the sun-dried tomatoes and tomato paste, and cook for 1 minute until the paste darkens slightly.
- Pour in the white wine and simmer for 2 minutes, scraping up any browned bits, until the wine is reduced by about half.
- Add the vegetable broth, heavy cream, pasta, salt, and pepper, then bring to a gentle boil.
- Reduce to medium-low and simmer uncovered for 10-12 minutes, stirring often, until the pasta is tender and the sauce is creamy.
- Stir in the Parmesan and basil for 1 minute, then serve immediately while glossy and hot.
