Creamy One-Pot Pasta by Byolyvv

Rich bacon and sun-dried tomato pasta finished with cream, Parmesan, and basil.

Ingredients

  • 8 oz pasta
  • 6 slices bacon, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 tbsp tomato paste
  • 1/2 cup dry white wine
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Cook the bacon in a large pot over medium heat for 5-7 minutes, until browned and crisp; leave about 1 tablespoon of fat in the pot.
  2. Add the onion and cook for 3-4 minutes, stirring, until softened, then stir in the garlic for 30 seconds until fragrant.
  3. Mix in the sun-dried tomatoes and tomato paste, and cook for 1 minute until the paste darkens slightly.
  4. Pour in the white wine and simmer for 2 minutes, scraping up any browned bits, until the wine is reduced by about half.
  5. Add the vegetable broth, heavy cream, pasta, salt, and pepper, then bring to a gentle boil.
  6. Reduce to medium-low and simmer uncovered for 10-12 minutes, stirring often, until the pasta is tender and the sauce is creamy.
  7. Stir in the Parmesan and basil for 1 minute, then serve immediately while glossy and hot.
