One Pot Chili Mac by Budget Bytes

hearty and comforting one-pot meal combining chili and macaroni for a quick weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 0.5 tsp dried oregano
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 3 cups beef broth
  • 8 oz uncooked elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat, about 5-7 minutes.
  2. Drain off excess grease. Add the minced garlic, chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute more until fragrant.
  3. Stir in the undrained diced tomatoes and the rinsed kidney beans.
  4. Pour in the beef broth and bring the mixture to a boil
  5. Add the uncooked macaroni, stir to combine, and reduce the heat to low. Cover and simmer for 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  6. Remove from heat. Stir in the shredded cheddar cheese until melted and creamy.
  7. Serve hot.
