One Pot Chili Mac by Budget Bytes

Ingredients
- 1 lb ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 0.5 tsp dried oregano
- 1 tsp salt
- 0.25 tsp black pepper
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, rinsed and drained
- 3 cups beef broth
- 8 oz uncooked elbow macaroni
- 1 cup shredded cheddar cheese
Instructions
- In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat, about 5-7 minutes.
- Drain off excess grease. Add the minced garlic, chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute more until fragrant.
- Stir in the undrained diced tomatoes and the rinsed kidney beans.
- Pour in the beef broth and bring the mixture to a boil
- Add the uncooked macaroni, stir to combine, and reduce the heat to low. Cover and simmer for 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
- Remove from heat. Stir in the shredded cheddar cheese until melted and creamy.
- Serve hot.
