Honey Garlic Chicken Thighs by Britscookin

Tender, bite-sized chicken thighs coated in a sweet and savory honey garlic sauce, finished with fresh green onions.

Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch (for thickening the sauce)
- 2 tbsp olive oil or vegetable oil (for cooking)
- 2 green onions, chopped (for topping)
Instructions
- Cut 2 lbs boneless, skinless chicken thighs into bite-sized pieces.
- In a bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and cornstarch. Mix well.
- Add the chicken pieces to the sauce mixture and toss to coat evenly. Let it marinate for at least 10 minutes.
- Heat 2 tbsp of olive oil or vegetable oil in a large skillet over medium-high heat.
- Add the chicken in a single layer (cook in batches if necessary to avoid overcrowding the pan). Brown the chicken on both sides until golden, about 3-4 minutes per side.
- Once browned, return all chicken to the skillet.
- Pour any remaining sauce from the bowl into the skillet. Bring the sauce to a simmer.
- Continue to simmer, stirring occasionally, until the sauce has thickened and the chicken is cooked through, about 5-7 minutes.
- Garnish with chopped green onions.
- Serve immediately, ideally over hibachi rice.
