Tender, bite-sized chicken thighs coated in a sweet and savory honey garlic sauce, finished with fresh green onions.

Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch (for thickening the sauce)
  • 2 tbsp olive oil or vegetable oil (for cooking)
  • 2 green onions, chopped (for topping)

Instructions

  1. Cut 2 lbs boneless, skinless chicken thighs into bite-sized pieces.
  2. In a bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and cornstarch. Mix well.
  3. Add the chicken pieces to the sauce mixture and toss to coat evenly. Let it marinate for at least 10 minutes.
  4. Heat 2 tbsp of olive oil or vegetable oil in a large skillet over medium-high heat.
  5. Add the chicken in a single layer (cook in batches if necessary to avoid overcrowding the pan). Brown the chicken on both sides until golden, about 3-4 minutes per side.
  6. Once browned, return all chicken to the skillet.
  7. Pour any remaining sauce from the bowl into the skillet. Bring the sauce to a simmer.
  8. Continue to simmer, stirring occasionally, until the sauce has thickened and the chicken is cooked through, about 5-7 minutes.
  9. Garnish with chopped green onions.
  10. Serve immediately, ideally over hibachi rice.
