Gilda-Inspired Basmati Rice Salad by Brillanterecetasfciles
Vibrant rice salad featuring classic gilda components with a zesty anchovy and lemon vinaigrette.

Ingredients
- 125g (1 cup) cooked basmati rice (from microwaveable pouch)
- 30g (1 oz) anchovies in oil, finely chopped (reserve oil)
- 4 piparras (pickled chili peppers), chopped
- 6 pitted green olives, chopped
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp extra virgin olive oil
- 1/2 lemon, juiced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 whole gilda skewer (for garnish)
Instructions
- Finely chop the anchovies, piparras, and olives, keeping them separate from the reserved anchovy oil.
- Heat the basmati rice pouch in the microwave for 30 seconds until warm, then set aside to cool slightly.
- Whisk together the reserved anchovy oil, extra virgin olive oil, lemon juice, chopped parsley, salt, and pepper in a small bowl to create the dressing.
- Combine the warm rice, chopped anchovies, piparras, and olives in a serving bowl.
- Pour the prepared vinaigrette over the rice mixture and toss thoroughly to combine.
- Top the salad with a whole gilda skewer before serving.
