Vibrant rice salad featuring classic gilda components with a zesty anchovy and lemon vinaigrette.

Ingredients

  • 125g (1 cup) cooked basmati rice (from microwaveable pouch)
  • 30g (1 oz) anchovies in oil, finely chopped (reserve oil)
  • 4 piparras (pickled chili peppers), chopped
  • 6 pitted green olives, chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp extra virgin olive oil
  • 1/2 lemon, juiced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 whole gilda skewer (for garnish)

Instructions

  1. Finely chop the anchovies, piparras, and olives, keeping them separate from the reserved anchovy oil.
  2. Heat the basmati rice pouch in the microwave for 30 seconds until warm, then set aside to cool slightly.
  3. Whisk together the reserved anchovy oil, extra virgin olive oil, lemon juice, chopped parsley, salt, and pepper in a small bowl to create the dressing.
  4. Combine the warm rice, chopped anchovies, piparras, and olives in a serving bowl.
  5. Pour the prepared vinaigrette over the rice mixture and toss thoroughly to combine.
  6. Top the salad with a whole gilda skewer before serving.
