Watermelon Mint Feta Salad by Bri Cooks

Refreshing summer salad featuring crisp watermelon, salty feta, and fresh mint in a light vinaigrette.

Ingredients
- 4 cup watermelon, cubed
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, torn
- 1/2 cup avocado oil
- 1/4 cup red wine vinegar
- 1 tbsp lime juice
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper (adjust to taste)
Instructions
- Whisk together the avocado oil, red wine vinegar, salt, and pepper in a small bowl until emulsified.
- Place the cubed watermelon, sliced red onion, and crumbled feta in a large serving bowl.
- Drizzle the vinaigrette and fresh lime juice over the salad ingredients.
- Toss gently to combine, then top with torn fresh mint leaves and serve immediately.
