Refreshing summer salad featuring crisp watermelon, salty feta, and fresh mint in a light vinaigrette.

Ingredients

  • 4 cup watermelon, cubed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, torn
  • 1/2 cup avocado oil
  • 1/4 cup red wine vinegar
  • 1 tbsp lime juice
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)

Instructions

  1. Whisk together the avocado oil, red wine vinegar, salt, and pepper in a small bowl until emulsified.
  2. Place the cubed watermelon, sliced red onion, and crumbled feta in a large serving bowl.
  3. Drizzle the vinaigrette and fresh lime juice over the salad ingredients.
  4. Toss gently to combine, then top with torn fresh mint leaves and serve immediately.
