Chocolate-Covered Peanut Butter Stuffed Dates by Bri Cooks

Sweet Medjool dates filled with creamy peanut butter, enrobed in smooth chocolate and finished with sea salt.

Ingredients
- 12 medjool dates, pitted
- 1/2 cup crunchy peanut butter
- 150g (5 oz) semi-sweet or dark chocolate, chopped
- 1 tsp coconut oil (optional, for smoother chocolate)
- 1/4 tsp flaky sea salt
Instructions
- Slice each date lengthwise and remove the pit, keeping the date mostly intact.
- Fill the center of each date with approximately 1-2 teaspoons of crunchy peanut butter.
- Melt the chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each stuffed date into the melted chocolate using a fork, ensuring it is fully coated.
- Place the coated dates on a parchment-lined tray and sprinkle immediately with flaky sea salt.
- Refrigerate for 10-15 minutes until the chocolate shell is firm and set.
