Chocolate-Covered Peanut Butter Stuffed Dates by Bri Cooks

Sweet Medjool dates filled with creamy peanut butter, enrobed in smooth chocolate and finished with sea salt.

Ingredients

  • 12 medjool dates, pitted
  • 1/2 cup crunchy peanut butter
  • 150g (5 oz) semi-sweet or dark chocolate, chopped
  • 1 tsp coconut oil (optional, for smoother chocolate)
  • 1/4 tsp flaky sea salt

Instructions

  1. Slice each date lengthwise and remove the pit, keeping the date mostly intact.
  2. Fill the center of each date with approximately 1-2 teaspoons of crunchy peanut butter.
  3. Melt the chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  4. Dip each stuffed date into the melted chocolate using a fork, ensuring it is fully coated.
  5. Place the coated dates on a parchment-lined tray and sprinkle immediately with flaky sea salt.
  6. Refrigerate for 10-15 minutes until the chocolate shell is firm and set.
