Wild Garlic French Toast with Asparagus by Boroughchef

Savory herb-infused French toast topped with tender charred asparagus and a generous dusting of parmesan cheese.

Ingredients

  • 4 slices sourdough bread, thick-cut
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/2 cup fresh wild garlic, finely chopped
  • 200g (7 oz) asparagus spears, woody ends trimmed
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tbsp unsalted butter
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Whisk eggs, milk, chopped wild garlic, salt, and pepper in a shallow bowl until well combined.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat and sauté asparagus for 4-5 minutes until tender and slightly charred; remove from pan and set aside.
  3. Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly soaked, about 30 seconds per side.
  4. Add remaining tablespoon of butter to the same skillet over medium heat.
  5. Fry the soaked bread for 3-4 minutes per side until golden brown and cooked through.
  6. Serve the French toast immediately topped with the sautéed asparagus and a generous amount of grated parmesan over medium heat until softened, about 5 min.
