Wild Garlic French Toast with Asparagus by Boroughchef

Savory herb-infused French toast topped with tender charred asparagus and a generous dusting of parmesan cheese.

Ingredients
- 4 slices sourdough bread, thick-cut
- 3 large eggs
- 1/2 cup whole milk
- 1/2 cup fresh wild garlic, finely chopped
- 200g (7 oz) asparagus spears, woody ends trimmed
- 1/2 cup parmesan cheese, freshly grated
- 2 tbsp unsalted butter
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Whisk eggs, milk, chopped wild garlic, salt, and pepper in a shallow bowl until well combined.
- Heat 1 tablespoon of butter in a large skillet over medium heat and sauté asparagus for 4-5 minutes until tender and slightly charred; remove from pan and set aside.
- Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly soaked, about 30 seconds per side.
- Add remaining tablespoon of butter to the same skillet over medium heat.
- Fry the soaked bread for 3-4 minutes per side until golden brown and cooked through.
- Serve the French toast immediately topped with the sautéed asparagus and a generous amount of grated parmesan over medium heat until softened, about 5 min.
