Rib Eye Tacos by Bkyardeats

Thinly sliced seared rib eye served on warm tortillas with a vibrant, freshly made salsa.

Ingredients
- 450g (1 lb) rib eye steak, thinly sliced
- 6 corn tortillas
- 1 cup fresh salsa (tomatillo or tomato-based)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp vegetable oil
Instructions
- Season the thinly sliced rib eye generously with salt and pepper on both sides.
- Heat a cast-iron skillet over high heat with 1 tablespoon of oil until smoking hot.
- Sear the rib eye slices in batches for 1-2 minutes per side until a deep brown crust forms.
- Warm the tortillas in a dry pan or directly over a low gas flame for 30 seconds per side until pliable.
- Assemble the tacos by placing the seared steak on the warm tortillas and topping with fresh salsa.
