Loaded Brisket Tater Tot Cups by Bkyardeats

Crispy golden tater tot cups filled with smoky chopped brisket and melted sharp cheddar cheese.

Ingredients
- 32 frozen tater tots
- 250g (9 oz) cooked brisket, finely chopped
- 150g (1.5 cup) sharp cheddar cheese, shredded
- 2 tbsp barbecue sauce
- 1 tbsp fresh chives, finely chopped (for garnish)
Instructions
- Preheat your oven to 200°C (400°F) and lightly grease a standard muffin tin.
- Place 3 frozen tater tots into each muffin cup and bake for 10-12 minutes until slightly softened.
- Use a small glass or the back of a spoon to press the softened tots into the bottom and up the sides of each cup to create a 'nest' shape.
- Bake the formed cups for another 8-10 minutes until the edges are crispy and golden brown.
- Mix the chopped brisket with the barbecue sauce in a small bowl.
- Fill each crispy tot cup with the brisket mixture and top generously with the shredded cheddar cheese.
- Return the muffin tin to the oven for 3-5 minutes, or until the cheese is melted and bubbling.
- Remove from the oven, garnish with fresh chives, and serve warm.
