Crispy Fried Cod Sandwiches by Bkyardeats

Golden-fried cod fillets on toasted brioche with a zesty homemade tartar sauce and fresh sprouts.

Ingredients

  • 2 fillets (approx. 300g) cod fillets
  • 1/2 cup all-purpose flour (for dredging)
  • 1 cup seasoned flour batter (flour mixed with salt, pepper, and spices)
  • 2 brioche buns
  • 1/2 cup mayonnaise
  • 1 tbsp dijon mustard
  • 2 tbsp pickles, finely chopped
  • 1 tbsp capers, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • 1/4 cup fresh sprouts
  • 1/2 tsp salt and pepper (to taste)

Instructions

  1. Combine mayonnaise, mustard, chopped pickles, capers, dill, garlic, and lemon juice in a bowl; stir well and set aside.
  2. Season cod fillets generously with salt and pepper on both sides.
  3. Dredge each fillet in plain flour, shaking off excess, then dip into the seasoned flour batter until fully coated.
  4. Heat oil in a heavy-bottomed pan to 175°C (350°F) and fry fillets for 3-4 minutes per side until golden brown and crispy.
  5. Butter the cut sides of the brioche buns and toast in a pan over medium heat for 1-2 minutes until lightly browned.
  6. Spread a layer of tartar sauce on the bottom bun, top with sprouts, the fried cod fillet, an extra dollop of sauce, and the top bun.
