Crispy Fried Cod Sandwiches by Bkyardeats

Golden-fried cod fillets on toasted brioche with a zesty homemade tartar sauce and fresh sprouts.

Ingredients
- 2 fillets (approx. 300g) cod fillets
- 1/2 cup all-purpose flour (for dredging)
- 1 cup seasoned flour batter (flour mixed with salt, pepper, and spices)
- 2 brioche buns
- 1/2 cup mayonnaise
- 1 tbsp dijon mustard
- 2 tbsp pickles, finely chopped
- 1 tbsp capers, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- 1/4 cup fresh sprouts
- 1/2 tsp salt and pepper (to taste)
Instructions
- Combine mayonnaise, mustard, chopped pickles, capers, dill, garlic, and lemon juice in a bowl; stir well and set aside.
- Season cod fillets generously with salt and pepper on both sides.
- Dredge each fillet in plain flour, shaking off excess, then dip into the seasoned flour batter until fully coated.
- Heat oil in a heavy-bottomed pan to 175°C (350°F) and fry fillets for 3-4 minutes per side until golden brown and crispy.
- Butter the cut sides of the brioche buns and toast in a pan over medium heat for 1-2 minutes until lightly browned.
- Spread a layer of tartar sauce on the bottom bun, top with sprouts, the fried cod fillet, an extra dollop of sauce, and the top bun.
